Ingredients
Original recipe (1×) yields 36 servings
Fortune Cookie Batter
- 3 large Egg whites
- 3/4 cup Granulated sugar
- 1/2 cup Butter — Melted
- 1/4 teaspoon Vanilla extract
- 1/4 teaspoon Almond extract
- 3 teaspoon Water
- 1 cup All-purpose flour — About 5 oz by weight
Instructions
- 1
Step 1 — Prepare the Oven
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat. Prepare small paper strips with your fortunes and keep them ready before baking.
- 2
Step 2 — Mix the Batter
Beat the egg whites and sugar on high speed for about 2 minutes, until frothy. Add the melted butter, vanilla extract, almond extract, and water. Mix until combined, then add the flour and mix just until the flour disappears.
- 3
Step 3 — Shape the Batter
Spoon the batter onto the prepared baking sheet using approximately one tablespoon per cookie. Spread each portion into a thin, even circle about 3 inches wide. Bake only two or three cookies at a time because they must be folded quickly.
- 4
Step 4 — Bake the Cookies
Bake for 7–8 minutes, until the edges are lightly golden. Do not let the cookies become too dark, as they may crack during folding. If they are not lightly golden, they may tear when shaped.
- 5
Step 5 — Add the Fortune and Fold
Remove the baking sheet from the oven. While each cookie is still warm and flexible, turn it over and fold it in half to form a semicircle. Insert a paper fortune as you fold, working quickly before the cookie becomes firm.
- 6
Step 6 — Shape the Fortune Cookies
Place the folded semicircle over the rim of a cup and gently bring the ends downward to form the traditional fortune-cookie shape. Handle the hot cookies carefully and place each one in a muffin tin to hold its shape.
- 7
Step 7 — Cool and Repeat
Repeat with the remaining batter in small batches. Leave the shaped cookies in the muffin tin until they cool and become firm. Serve them or package them as homemade gifts.
