Why You'll Love This Recipe

  • Easy preparation: Prepare the vegetables and season the chicken with a simple spice blend.

  • Hearty and satisfying: Chicken thighs, potatoes, and vegetables make a filling main course.

  • Fresh herb dressing: Creamy yogurt, parsley, lemon, and Dijon mustard add a bright finish.

  • Great for meal prep: Divide the cooked chicken and vegetables into portions for weekday lunches.

  • Flexible vegetables: Swap in suitable vegetables such as broccoli, bell peppers, zucchini, or Brussels sprouts.

Tips for the Best Results

Cut the potatoes, sweet potatoes, and carrots into similar-sized pieces so they roast evenly. Spread the vegetables in a single layer on the sheet pan to help them brown instead of steam.

For crispier chicken skin, pat the chicken thighs dry before seasoning and roast them skin-side up on a greased oven-safe wire rack set over a separate sheet pan. The rack allows fat to drip away from the chicken.

Blend the yogurt dressing until smooth and taste it before serving. Fresh lemon juice and parsley give the dressing a bright flavor that balances the roasted vegetables.

Easy Ingredient Swaps

  • Vegetables: Try broccoli, Brussels sprouts, bell peppers, asparagus, zucchini, or tomatoes.

  • Potatoes: Replace the potatoes or sweet potatoes with pumpkin or butternut squash.

  • Carrots: Parsnips can be used instead of carrots.

  • Fresh herbs: Use rosemary instead of thyme, or try coriander or mint in the dressing.

  • Dressing: Use unsweetened dairy-free yogurt for a dairy-free alternative.

What to Serve with Sheet Pan Chicken

This recipe is served over fresh arugula, also known as rocket, with the roasted vegetables and chicken arranged on top. Baby spinach or mixed salad greens can also be used. Spoon the lemon parsley yogurt dressing over each serving just before eating.

Frequently Asked Questions

Can I prepare this recipe ahead of time?

Yes. Roast the chicken and vegetables, then divide them into meal-prep containers. Keep the fresh greens separate if you prefer them crisp, and refrigerate the dressing in a sealed container.

How should I store leftovers?

Store leftover chicken and vegetables in an airtight container in the refrigerator for up to 3 days. Refrigerate the dressing separately when possible.

Can I use skinless chicken thighs?

Yes. Skinless chicken thighs can be used, but they may cook faster and will not develop the same crispy skin. Place them directly on the lined sheet pan and check for doneness earlier.

Can I change the vegetables?

Yes. This recipe is flexible. Choose vegetables that roast well and cut them into appropriately sized pieces so they cook evenly.

Storage and Meal Prep

Refrigerate leftovers in airtight containers for up to 3 days. For meal prep, divide the chicken and roasted vegetables into four portions. Add the arugula and dressing when ready to serve for the best texture.

A Note on Nutrition

Nutrition values can vary depending on the chicken used, how much rendered fat is discarded during roasting, and the portion size. Treat any nutrition estimates as approximate rather than exact.

Ingredients

Original recipe (1×) yields 4 servings

  • 5 lb Whole chicken, giblets removed
  • 1 small Onion, peeled and quartered
  • 2 tablespoons Olive oil, plus extra if needed
  • 2 teaspoons Salt
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 2 teaspoons Paprika
  • 1½ teaspoons Black pepper
  • 2 teaspoons Brown sugar
  • 1 teaspoon Italian seasoning or dried thyme

Instructions

  1. 1

    Preheat the Oven

Preheat the oven to 300°F (150°C). Line a roasting pan with aluminum foil and place a roasting rack on top. Lightly grease the rack if needed.

  2. 2

    Prepare the Seasoning

Combine the salt, garlic powder, onion powder, paprika, black pepper, brown sugar, and Italian seasoning in a small bowl.

  3. 3

    Prepare the Chicken

Pat the chicken dry inside and out with paper towels. Gently loosen the skin over the breast and thighs if desired.

  4. 4

    Rub with Oil and Season

Rub the olive oil over the entire chicken, including underneath the loosened skin. Sprinkle the seasoning mixture over the outside, inside the cavity, and beneath the skin.

  5. 5

    Add the Onion

Place the chicken breast-side up on the roasting rack. Stuff the cavity with the quartered onion. Tuck the wings underneath and tie the legs together with kitchen twine if desired.

  6. 6

    Roast the Chicken

Roast uncovered for approximately 2 hours and 15 minutes, checking the internal temperature as it cooks. Continue roasting as needed until the thickest part of the breast and the innermost thigh reach 165°F (74°C), avoiding the bone.

  7. 7

    Rest the Chicken

Remove the chicken from the oven and let it rest loosely covered with foil for 10–15 minutes.

  8. 8

    Carve and Serve

Carve the chicken and serve with roasted vegetables, potatoes, rice, salad, or your favorite side dishes.
